Formation of cyclodextrin complexes with astaxanthin

The project addresses the fact that astaxanthin has very poor water solubility and is very prone to degradation, which leads to reduced bioavailability and prevents its application. The aim of the project is to verify the possibility of forming complexes of astaxanthin with cyclodextrins, to determine their solubility and to compare the effect of cyclodextrins on the stability of astaxanthin.
